So I ended my busy 6 modules semester a few weeks back and celebrated by making a layered cake. I’ve always failed miserably at making layered cakes and wanted to make a proper one badly. But I don’t want to make another swiss meringue buttercream cake/cupcake and I still have yet to recover my faith in whipped cream so I decided to try a fudge frosting instead.
I found this awesome looking recipe from Sweetapolita but turned it into a normal chocolate version since I only have regular cocoa powder and dark chocolate on hand. But the cake still turned out yummy!
Instead of making 3 8-inch layers, I made 2 7-inch layers instead. However, my cake rose in the middle so when i stacked them, there’s this gap at the side.
Nonetheless, I’m very happy with the results! The cake was moist and yummy and the frosting was good too. And most importantly, the cake looked decent!
Another conclusion: Sweetapolita’s recipes give good results and is another trusty site to consult! I’ll probably try another recipe from her soon!
