So it was my mother’s birthday a few days ago and since it was the Christmas season and I was feeling rather jolly, my sister and I decided to whip up a birthday meal for my mother, featuring this awesome roast chicken.
I first made this chicken many many years ago and it was fabulous and awesome. It was very moist though the skin wasn’t as golden brown as in the picture. Jamie Oliver’s recipes are really great!
Anyway, so we decided to follow his recipe again and this time round, the chicken came out moist andddd golden brown! The roast vegetables were great too, the carrot was so sweet and out of the world haha. Oh and the fun thing about this recipe is that a lemon and herbs were stuffed inside the chicken. Very fun to stuff things inside a chicken heh heh.
However, the chicken and vegetables were quite dry when I took them out at the 40 minutes mark. Had to add some water to the tray before basting it.
